Peachy Keen & Prettier Than Pie | Peach Galette Recipe
August is National Peach Month. Well, if I had forgotten that ‘tis peach season, my mother would have reminded me since she recently made a trip to Chick-Fil-A to get a peach shake in their drive thru. Did you know, peaches are the third most popular fruit in the US?
This summer I joined the celebration. I finally purchased a box from The Peach Truck. Over the years, I have fallen in love The Peach Truck branding. While I have patiently waited to join in on the fun, this year I decided to find out why everyone raves about their Peach Truck experience.
The peaches were beautiful and delicious. They did not disappoint, and I am so glad I split the box with a friend. I would highly recommend The Peach Truck over a trip to your local farmer’s market for peaches. Now I understand why folks obsess over them and how this brand from Georgia became a southern legend.
This summer before I headed out on vacation I froze a few bags of peaches. I recently used these frozen peaches to make a peach galette (pronounced guh-let). It was so easy and fun. While I love a peach pie and cobbler, this was quick to make, and it was so charming. Dress it up a la mode or eat it for breakfast paired with your favorite cup of coffee. I have added the recipe below, and I highly recommend the Peach Truck experience and this fabulous peach galette. Enjoy!
Peach Galette Recipe
Ingredients
2 and 1/2 peaches skinned, pitted and sliced
4 cup of brown sugar
1/8 cup of white sugar
1/2 lemon juiced and zested
1/4 tsp vanilla bean extract
1/4 tsp cinnamon
1/4 tsp corn starch
1 store bought pie crust
1 egg white for egg wash
1 tsp butter
Instructions
Heat oven to 450 degrees.
If your skins do not easily come off, blanch your peaches. Evenly slice two of the peaches and cube the other half.
Combine the cubed 1/2 peach, brown sugar, white sugar, lemon juice, zest, cinnamon, corn starch, and vanilla extract in a sauce pan on low to medium heat. Simmer your sauce.
Take your pie crust and spread it out over a baking sheet.
Once your sauce is thickened and done, add a spoonful to the base of the crust and spread out.
Put your peaches in a circular pattern around the crust leaving and even 2 inches around the edge.
Finally, pour the remaining sauce mixture over the top of the galette while keeping the 2 inches around the border of the galette.
Fold over the crust to cover the edge of the peaches.
With a pastry brush wash the top of the galette with the egg. Use at your discretion, but I found you will probably not use the entire egg. It will be a lighter wash.
Cook the peach galette for 20-25 minutes in your oven. The crust will be a light brown and the sauce will be bubbly once it is done. Take the galette and remove it from the oven. Let it cool off a bit. I recommend eating it while warm with a scoop of vanilla bean ice cream a la mode.
